Chocolate Covered Dates with Cream Cheese

Ingredients:
24 Medjool dates, pitted
1/2 cup of cream cheese
1/4 cup of chopped walnuts
1/4 cup of shredded coconut
1/2 teaspoon of ground cinnamon
1/2 teaspoon of vanilla extract
8 ounces of dark chocolate, chopped
1 tablespoon of coconut oil
Method
1.In a mixing bowl, combine the cream cheese, chopped walnuts, shredded coconut, ground cinnamon, and vanilla extract. Stir until well combined.
2.Using a small spoon, stuff each date with a small amount of the cream cheese mixture. Place the stuffed dates on a baking sheet lined with parchment paper.
3.In a double boiler or a microwave-safe bowl, melt the chopped dark chocolate and coconut oil until smooth and glossy.
4.Dip each stuffed date into the melted chocolate mixture, making sure to coat it evenly. Place the chocolate-covered date back onto the parchment paper-lined baking sheet.
5.Repeat until all the dates are coated in chocolate.
6. Chill the stuffed chocolate dates in the refrigerator for 10-15 minutes, or until the chocolate has set
